Under supervision to manage concession and guest service employees. Responsible for overseeing and conducting inventories, ordering, and maintaining concession supplies. In the absence of the Gift Shop/ Admissions Manager, oversee the gift shop/admissions activities.
This position exercises supervision over temporary and/or part-time employees.
Examples of Duties
Recruit, hire, train, manage, schedule, and direct concession employees. Train employees to adhere to policies and procedures related to food handling/food presentation and attraction operation.
Responsible for the day-to-day functions of all food service concessions, food carts, catering operations, and zoo attractions including the giraffe encounter, train, carrousel, and paddleboat. Food service concession activities include developing and implementing food menus, food preparation, and food presentation.
Oversee, inspect, and control cash handling for all zoo concessions. Ensure that employees follow appropriate cash handling policies and procedures.
Responsible for the procurement of all concession related products. Oversee and approve all related invoices for processing / payment.
Control food quality, service, cleanliness, safety, with continuous inspection of zoo carts and facilities.
Responsible for preparation, set up and take down of catering events and activities.
Develop and implement an adequate system to prevent loss of receipts and/or products.
Create reports to track monthly food cost, employee safety, employee performance, and other relevant items.
Collaborate with the Zoo Director, Business Operations Manager, and Special Events Coordinator to determine scope of services required.
Prepare menus, menu pricing, food preparation, and presentation for special zoo events, activities, and rentals.
Maintain current operating manuals for all locations.
Assists with zoo special events.
OTHER JOB RELATED DUTIES
Perform other job related duties and responsibilities as assigned.

Cash handling, documenting, and reporting.
Exceptional customer and guest services.
Ride attraction equipment operation.
Menu and food preparation and presentation.
Inventory control including supply ordering.
Operate office equipment including computer equipment using MS-Office Word and Excel.
Perform bookkeeping. Inspect sales receipts for accuracy; compile and balance daily revenue statements.
Communicate clearly and concisely both orally and in writing with internal and external customers.
Mediate personnel issues or problems effectively.
Provide excellent guest service.
Operate and maintain food service equipment, rides, and attractions.
Ensure that staff follows safety protocols and procedures pertaining to concessions and attractions.
Motivate work teams and crews.
Be creative and freethinking.
Work independently with minimal supervision.
Multi-task, prioritize, and organize projects.
Establish and maintain cooperative working relationships with those contacted in the course of work, both internally and externally.

Experience and Training Guidelines:
Any combination equivalent to experience and training to provide the required knowledge, skills, and abilities may be qualifying. Knowledge, skills, and abilities may be obtained through:
Two (2) years of food service and supervisory experience is preferred.
High School Diploma or GED is required.
License or Certificate:
First Aid and CPR certifications are preferred.
Food Protection Manager Certification is required or must be obtain within the first 90 days of employment.
Valid Texas Driver's License.
Essential duties require the following physical skills and work environment:
Must regularly attend Staff and other meetings.
Ability to work a flexible work schedule, which may include nights, holidays, and weekends.
Ability to work in a variety of extreme weather conditions.
Must be able to lift and carry up to 50 pounds.
