The Food Services Operations Manager is responsible for planning, developing, organizing, directing, and controlling food service concession operations to meet established goals and managing all assigned locations including all restaurants, stands and carts for revenue generation and expense control. Drawing upon your prior food service experience, you will develop, recommend, and implement programs in all food service concession areas to maximize quality service to guests, maximize sales, and increase profitability. This also includes conducting appropriate analyses for preparing and presenting reports on department performance; reviewing and approving planned food concession sales activities for the entire park; directing, coordinating and reviewing the performance of reporting units and providing necessary coordination between units. Utilizing your participative, people oriented management style, you will oversee staff hiring, orientation, and on-the-job training programs and identify training needs. This also includes overseeing staff management; communicating Society policies, department procedures and expectations and holding staff accountable; and keeping employees appropriately informed of Society and Group plans and progress. You will work with General Managers, Area Managers, and Human Resources to maintain adequate staffing levels throughout the year. As Food Service Operations Manager, you will monitor, recommend and develop operating policies and procedures within the food concession areas; strategize, develop and implement long-term sanitation programs park-wide and in compliance with current county, regulatory, and organizational requirements. Making use of your management abilities, you will recommend annual objectives and work plan for Food Service Operations; develop specific short and long-term plans and programs, together with supporting budget and financial estimates; regularly review performance against operating plans, budget, and established goals and objectives. You will provide information to subordinates on results and recommend changes, if necessary, in food service operation direction; monitor department operating budget, weekly profit and loss statements, and expense reports; and review and approve cost controls, cost estimates, and staffing and facilities forecasts. Keeping abreast of industry trends and practices, you will develop plans for new or improved practices or procedures which support the mission and goals of the organization.
As Brookfield Zoo is open 365 days each year, this position routinely includes working weekends, holidays, and occasional evenings.
The requirements for this position include:
Associates in Business, Food Service Management or other relevant field, or equivalent combination of education/training and/or relevant experience required.
Minimum 5 years experience in food service management and/or retail operations management experience required.
Strong customer service orientation.
Well-developed management abilities including planning, budgeting, decision-making, and problem-solving skills.
Strong written and verbal communications skills required.
Strong interpersonal skills required. Ability to develop a rapport and work effectively with all levels of staff.
Ability to work effectively under pressure in fast-paced environment, meet critical deadlines, and adhere to Society standards.
Strong computer skills required; Microsoft Word, and Excel.
Must pass and maintain food service sanitation certification required by city, county, and state within 1 year of hire.
Experience and/or ability to work and interact effectively with a diverse, multicultural audience.
Valid driver’s license required. Illinois residents must possess a valid Illinois license within 90 days of hire. Valid out-of-state license required for out-of-state residents.
This is a full-time position which routinely includes working weekends, holidays, and occasional evenings.
The desirable/preferred qualifications include:
Familiarity with Info Genesis and/or Food Trak software preferred but not required.
Experience managing multiple locations preferred.
Multilingual ability, Spanish fluency a plus.
