The Virginia Zoo is seeking a Food Service General Manager to lead the Virginia Zoo's food service department. This position is in charge of all food service functions including: developing and managing employees, understanding and managing profit-loss statements, developing a successful catering service for Zoo events and programs, and coordinating front-of-the-house and back-of-house staff operations. Food service facilities include a cafeteria style restaurant, specialty bistro take-away, snack counter and Zoo event venues. The general manger also delivers revenues and profits by helping to develop menu and venue related marketing programs, providing appealing restaurant service and facilities, and through the highest level of staff customer service.
Customer Service: Lead food service team in delivering internal and external customer service with excellence, and provide direction that represents the organization's standards of employee conduct and presence. Maintain patron satisfaction by monitoring, evaluating and auditing food, beverage and service offerings; initiating improvements; and building relationships with the entire Zoo staff and restaurant patrons.
Cash handling: Maintain and monitor cash handling procedures. Work within established financial controls with Zoo operations and accounts managers.
Operational functions: Order and receive food and supplies. Assist in establishing and maintaining training and operation procedures. Ensure equipment functionality and report maintenance issues. Maintain safe, secure and healthy facilities by establishing, following and enforcing sanitation standards and procedures; complying with health and legal regulations; and maintaining security systems. Maintain staff schedules and payroll.
Catering: Work with Zoo operations managers to attract patrons by developing and implementing group and event menus, marketing sales opportunities, and helping to establish public and community relations. Provide desirable menu selections, and rental and eatery facilities to internal and external clients by identifying and tracking changing demand.
Staffing: Accomplish food service human resources objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling and disciplining staff; communicating job expectations; planning, monitoring, appraising and reviewing job contributions; planning and reviewing compensation actions; and enforcing policies and procedures.
Planning & Budget: Create and implement annual strategic sales forecasts and budgets. Control purchases and inventory; review and evaluate usage reports and take corrective action. Perform monthly operations analysis and submits report to Zoo operations manager.
Associates or Bachelors degree in food service or related field.
Food service management certification or equivalence in significant experience.
At least 3 years experience in food service management.
Exceptional customer service and communications skills and experience.
Problem-solving and interpersonal skills.
Proficient in POS registers/back office, credit card terminals, restaurant equipment and remote site management.
Ability to think logically, prioritizing and delegating responsibilities where necessary.
Effective time-management skills.
Ability to maintain a positive attendance record and work a flexible schedule, including weekends, holidays and some evenings.
Able to work in a professional manner with Zoo visitors, clients, volunteers and staff.
